Ingredients:

Smoked Salmon50gm
Parma ham20gm
Musk Melon50gm
Cream Cheese10ml
Olive Oil05ml
Basil02gm
Balsamic caviar05ml
Cherry Tomato05gm
Kosher Salt03gm

Method:

For Tomato caprese
Combine vine tomatoes. kosher salt in a bowl. Let stand 5 minutes. Add basil leaves, olive oil, balsamic vinegar, and pepper and mozzarella balls, tossed properly before serve. Garnish with extra virgin oil and fresh basil.

For smoked salmon roll
In a small bowl, mix the cream cheese, lemon juice, zest, chives, and salt. To assemble, lay an 8 or 9-inch long sheet of plastic wrap .Slightly overlap slices of salmon on the plastic to create a rectangle measuring about 3-1/2�7 inches. Gently press the roll together Transfer the roll to a cutting board. Cut the roll into pieces garnish by balsamic caviar and fresh dill. Arrange nicely and serve chilled.

Prosciutto with musk Melon
Scoop out the seeds from the melon, cut it cubes and remove the rind. Lay overlapping melon slices on four plates. Brush the melon slices with the dressing. Garnish with cured prosciutto and micro greens and season with a few grindings of pepper.
