HISTORY LESSON

Burrowed on the calm hills of the Vietnamese plateaus, Ana Mandara is a petite fragment of France in the core of the country. If Dalat is petite Paris, then Ana Mandara is petite Dalat. In the middle of a lush park, 17 villas made by the French, for the French, between 1920 and 1930 have been converted into an indulgence resort. Previously the Six Senses Resort, the villas were refurbished by French interior architect, Brigitte Dumont de Chassart, in their unique style with some additional stylish touches. Today, although this serene pine grove is no longer a Six Senses resort, its remnants a hotel complex worthy of its previous owners. The 70 rooms, between 3 and 5 per villa, evoke the appeal of French colonial life with the addition of modern upscale technology for optimum comfort. The property also has a beautiful slate swimming pool, a spa and a restaurant which proposes the finest of French vintage wines. VIETNAMESE GASTRONOMY AT IT�S BEST


A private cooking class is a great place to begin adding Vietnamese to your own repertory. You must pre book the class a day in advance and it is well worth it. Colonist vocations by China and France have had their effect, but Vietnamese food has a diverse uniqueness of its own, advocating humble, new flavours assigned together in the accurate measures. Fish oil, coriander, chilli, morning glory, basil lemongrass and tamarind are the dominant flavours, and vegetables often appear on the plate firm to bite. We first learn about the Vietnamese kitchen and pluck our own herbs from the inhouse organic garden, before making our own delicious meal under the direction of the chef. Around a lush green oasis, we have our own work station and personal gas burner, and all of us prepare our own. We learn that the iconic clay pot is essential to Vietnam�s heathy, lip-smacking stews, as the pot steams the food minus dispersing the savours. After making dishes such as Vietnamese hand rolls with prawns, and hot and sour fish soup, we sit down to relish the meal with a glass of wine. The chef, who conducts the class proposes certain dishes to cook, counting his own family recipes, but guest requests are also appreciated. The gastronomic adventure continues for guests at the resort�s restaurant, where the chef works creates a further array of local dishes along with imaginative world cuisine, from comfort food to fine dining. At Ana Mandara Villas Dalat many guests find it hard to drag themselves away from their beautifully designed, private villas or the stunning Spa, but enticements include boating around the lake, a stroll at the nearby night market or a tour of the Domaine De Marie church offering a scenic panoramic view of the city.
