Carrot and Broccoli Puree Soup

Carrot Soup Ingredients 1 Cup� � � � � � � � � Chopped Onions 3 tbsp� � � � � � � � �Butter 2 � Cup� � � � � � �Sliced Carrots 1 pc� � � � � � � � � �Large Potato, peeled and cut into cubes 1 pc� � � � � � � � � �Celery Stalk (finely chopped) 3 Cups� � � � � � � �Vegetable Broth 1 tbsp� � � � � � � � Chopped Ginger To taste� � � � � � � Salt & Pepper Method
  • Heat butter in a pan over medium heat add carrots, potato, onion, celery, vegetable broth & ginger then cook until vegetables are tender for about 30 minutes.
  • Let it cool for 15 minutes and blend in a processor till smooth.
  • Add cream, salt, pepper & cook over low heat until heated through about 10 minutes.
Broccoli Soup Ingredients 1 Cup� � � � � � � � Chopped Onions 1 � tbsp� � � � � � Garlic, chopped 3 tbsp� � � � � � � � Butter 3 Cups� � � � � � � �Broccoli, cut into pieces 1 pc� � � � � � � � � �Large Potato, peeled and cut into cubes 1 pc� � � � � � � � � �Celery Stalk, finely chopped 3 Cups� � � � � � � �Vegetable Broth 1 tbsp� � � � � � � � Chopped Ginger To taste� � � � � � �Salt & Pepper Method

  • Add cream, salt, pepper & cook over low heat until heated through about 10 minutes.
Presentation Finally pour the carrot and broccoli puree soup with the help of ladle in equal quantity from top of the both sides in the soup bowl and serve immediately and top with chopped parsley.
