Carrot Soup
Ingredients
1 Cup� � � � � � � � � Chopped Onions
3 tbsp� � � � � � � � �Butter
2 � Cup� � � � � � �Sliced Carrots
1 pc� � � � � � � � � �Large Potato, peeled and cut into cubes
1 pc� � � � � � � � � �Celery Stalk (finely chopped)
3 Cups� � � � � � � �Vegetable Broth
1 tbsp� � � � � � � � Chopped Ginger
To taste� � � � � � � Salt & Pepper
Method
- Heat butter in a pan over medium heat add carrots, potato, onion, celery, vegetable broth & ginger then cook until vegetables are tender for about 30 minutes.
- Let it cool for 15 minutes and blend in a processor till smooth.
- Add cream, salt, pepper & cook over low heat until heated through about 10 minutes.
- Heat butter in a pan over medium heat, add brocoli, potato, onion, celery, vegetable broth & ginger then cook until vegetables are tender for about 30 minutes.
- Let it cool for 15 minutes and blend in a processor till smooth.
- Add cream, salt, pepper & cook over low heat until heated through about 10 minutes.
