Method
- Marinate the salmon with passion fruit seasoning.
- Cook potatoes in salted water and pass through sieve.
- Add warm cream, seasoning and wasabi powder to the mashed potatoes.
- Reduce the passion fruit juice with butter and chili.
- Sear salmon on the grill and sprinkle chili flakes.
- Serve with wasabi mashed potato.
