Method
- Slit chicken breast and flatten it, make as the shape of a butterfly.
- Meanwhile put the cuscus in a bowl and soak with lukewarm water for 90 minutes, drain. Let it sit on top of a kitchen towel to dry.
- After cuscus dries out, add chopped dry fruits, olive oil, salt and pepper and lemon juice, mix them together.
- Poach the sausages.
- To make the mashed potato, boil the potato till it softens, mash and then pass through the sieve. Add the warm cream and the butter to mashed potatoes, mix well and season.
- To make the sauce, simmer the stock and red wine, add seasonings.
- Grill the chicken, then coat with the sauce, slice into pieces.
- Pipe the mashed potato and serve chicken with mashed potato.
