Method
- First of all, for the potato fondant, peel the potato and seal it with rosemary.
- Then put the potato with apple juice in the oven along for 45 minutes.
- After that make spinach puree and carrot coulis.
- Grill the fish fillet, prawn and salami. Make a small dices of carrot, beetroot to make a salsa.
- Whisk the cream and add lemon chives for the sauce.
- Now make a layer of fish and salami.
- Serve the dish with apple fondant potato, carrot coulis, spinach puree and garnish it with the salsa and chives.
