Ingredients
For Fresh Pepper Sauce:

1 pc� � � � � � � � � � � Grilled Poblano Chili, Peeled, Seeded and Finely Diced
1 pc� � � � � � � � � � � Grilled Serrano Chili, Peeled, Seeded and Finely Diced
� tsp� � � � � � � � � � Red Pepper Flakes
2 cloves� � � � � � � � �Finely Chopped Garlic
� tsp� � � � � � � � � � Kosher Salt
2 tbsp� � � � � � � � � �Finley Chopped Fresh Cilantro Leaves
Ground Pepper
For Grilled Prawns:
24 pcs� � � � � � �Prawns (preferably with heads)
1tbsp� � � � � � � Olive Oil
1tsp� � � � � � � � Kosher Salt
1tsp� � � � � � � � Ground Pepper
Method
- Mix all ingredients for the sauce in a medium bowl.
- Cover the mixture and let sit at room temperature for at least 1 hour and up to 2 hours before serving.
- Heat the grill to a high temperature
- Toss the prawns with the oil in a bowl and season with the salt and pepper.
- Grill the prawns for 2 to 3 minutes per side, or until just cooked through.
- Place it on a platter and immediately spoon the sauce over shrimp with a slotted spoon.
- Serve hot.
