10ml� � � � � White Cooking Wine
15gms� � � � Sliced Mushroom
15gms� � � � Diced Ripe Pumpkin
20ml� � � � � Vegetable Broth
Method
- Heat the sauce pan, add olive oil and butter, add onion and cook till onion softens.
- Add rice and shallow fry till lightly brown, now deglaze the pot with wine.
- Add the broth, bring it to boil and now simmer till rice is cooked and little broth is left.
- Add mushroom and the pumpkin and continue cooking.
- Add the cream, season as per your taste, mix in parmesan and serve.
