Mushroom Pumpkin Risotto

  Ingredients 50gms� � � � �Arborio Rice 10gms� � � � Chopped Onions 10ml� � � � � �Olive Oil 7gms� � � � � Grated Parmesan Cheese 15ml� � � � � Cooking Cream 10gms� � � � Butter 10ml� � � � � White Cooking Wine 15gms� � � � Sliced Mushroom 15gms� � � � Diced Ripe Pumpkin 20ml� � � � � Vegetable Broth Method
  • Heat the sauce pan, add olive oil and butter, add onion and cook till onion softens.
  • Add rice and shallow fry till lightly brown, now deglaze the pot with wine.
  • Add the broth, bring it to boil and now simmer till rice is cooked and little broth is left.
  • Add mushroom and the pumpkin and continue cooking.
  • Add the cream, season as per your taste, mix in parmesan and serve.
