1. Pavlova Roulade
Ingredients
4nos����������������� Egg Whites
25gms�������������� Corn Flour
25gms�������������� White Vinegar
35gms�������������� Caster Sugar
12gms�������������� Caster Sugar

Method
- Beat the egg whites until it is stiff.
- Add corn flour, vinegar and the 35 grams of caster sugar and beat it until smooth.
- Fold in the 12 grams caster sugar and bake at 190�C for approximately 5 minutes until the top is lightly brown, turnout and sprinkled with toasted coconut.
- Rub the butter into the sieved ingredients until it forms a sandy texture.
- Spread the crumble over a baking tray and bake at 160�C until light golden.
- Mix all ingredients together and bring to boil until thick flavored coulis, stain and ready to use.
