1. Pavlova Roulade Ingredients 4nos����������������� Egg Whites 25gms�������������� Corn Flour 25gms�������������� White Vinegar 35gms�������������� Caster Sugar 12gms�������������� Caster Sugar Vinegar Toasted Coconut Method
  • Beat the egg whites until it is stiff.
  • Add corn flour, vinegar and the 35 grams of caster sugar and beat it until smooth.
  • Fold in the 12 grams caster sugar and bake at 190�C for approximately 5 minutes until the top is lightly brown, turnout and sprinkled with toasted coconut.
2. Pistachio Crumb Ingredients 60gms�������������� Butter 75gms�������������� Caster Sugar 45gms � � � � � � � Flour 50gms�������������� Pistachio 2gms���������������� Salt Method
  • Rub the butter into the sieved ingredients until it forms a sandy texture.
  • Spread the crumble over a baking tray and bake at 160�C until light golden.
3. Mango Coulis Ingredients 300gms������������� Mango Pulp 45ml������������������ Lemon Juice 30gms��������������� Sugar Star anise for Flavor Cinnamon Sticks for Flavor Method
  • Mix all ingredients together and bring to boil until thick flavored coulis, stain and ready to use.
