Roasted Duck with Mashed Orange Potatoes

Ingredients 1���������������������� Whole Duck 1 kg������������������ Tomatoes 200gms������������� Kale 200gms������������ Pakchoy 200gms������������ Young Pumpkin Vines 2 tbsp��������������� Pomegranate 10 ml��������������� Orange Juice 2 tbsp�������������� Butter As required Extra Virgin Olive Oil To taste������������ Garlic To taste � � � � �� Rosemary To taste������������ Thyme To taste������������ Nutmeg To taste������������ Salt Method
  • Cut the duck into 4 pieces and place it on an oven tray.
  • Season it with a generous amount of extra virgin olive oil, salt, pepper, rosemary, garlic and thyme.
  • Place the tray in a pre-heated oven at 180� for one and a half hour.
  • Boil the potatoes with their skin on, cook them until tender.
  • When the duck is almost ready, prepare the mash the potato along with butter, nutmeg, orange juice and salt.
  • In a cooking pan, heat the oil, garlic cloves and throw in the vegetables.
  • Add pomegranate seeds and season with salt and pepper to taste.
  • Plate the duck with its juice.
