For dusting� Plain Flour
To taste� � � �Salt & Pepper
For deep frying Oil

15-20gms� �Tartar Sauce
Method
- Fine chop the fish and mix with salt, pepper, mustard paste and bread crumb. Make small balls.
- Heat oil in a deep pan, dip the fish balls into plain flour and deep fry in low heat till they are cooked properly.
- To make spun sugar, heat the sauce pan with sugar and little water.
- After the sugar caramelizes, check if it is coating the back of the spoon.
- Let it cool a bit, now take the fork and start to drizzle into a stainless steel bowl, it will form a thread like sugar ribbons.
- Let them sit for a while and collect them to form a bunch of spun sugar.
- To form a cucumber bin, peel the cucumber and cut into a bin shape, scoop out the core.
- Serve fish balls in cucumber bin with spun sugar on top.
