Takha is slow cooked gelatinized meat dish, this is a favorite winter delicacy of Newa Cuisine

Ingredients 500 gms� � � � � � � �Buffalo Cheek or Meat with Skin To taste� � � � � � � � Salt � tsp� � � � � � � � � �Cumin Powder To taste� � � � � � � � Chilli Powder A pinch� � � � � � � � �Turmeric Powder A pinch� � � � � � � � �Garam Masala 1 tbsp� � � � � � � � � �Mustard Oil � tsp� � � � � � � � � � Fenugreek Seeds 1 tsp� � � � � � � � � � �Ginger Garlic Paste Method
  • Boil and simmer water for 30 minutes in a pot.
  • Add the meat.
  • Season with salt, chili powder, garam masala, ginger garlic paste and slow cook in low heat for 2.5- 3 hours.
  • Take a pan. Heat oil and add fenugreek seeds to crackle and cook until black and add some turmeric powder. Temper the meat curry.
  • Boil for a few more minutes.
  • Transfer into a container and place it overnight in cool place or for a few hours in a refrigerator until it sets into gelatinized form, Serve in pieces.
